Impasta con lievito, malto, sale + 50ml acqua, poi aggiungi il resto dell acqua poco alla volta, infine olio. Giro di pieghe e giù a lievitare fino a quasi raddoppio (25-30min) Dividi: in 3 panetti da 290g o 4 da 220g, Forma, copri e fai lievitare (anche con filo d’olio sotto).
