​Ingredients: ​-2 cans (400g each) Borlotti or Pinto beans, drained ​-150g pancetta or thick-cut bacon, diced ​-100g spicy Italian sausage, sliced ​-1/2 medium yellow onion, finely diced ​-3 garlic cloves, minced ​-1 can (400g) crushed tomatoes ​-1/2 glass dry red wine ​-1 fresh red chili pepper, finely chopped ​-1 bay leaf ​-2 tbsp olive oil ​-1 rustic loaf of crusty bread (for dipping!) ​-salt and pepper to taste ​Instructions: ​Heat the olive oil in a large cast-iron skillet over medium heat. Add the onion and sauté until soft and translucent, about 3 minutes. ​Add the pancetta and sliced sausage. Cook until the meat edges turn crisp and the fats render. Stir in the garlic and chili pepper, cooking for 1 minute until fragrant. ​Pour in the red wine to deglaze the pan, scraping up all the tasty bits from the bottom. Let the liquid reduce by half. ​Turn the heat down to low. Add the tomatoes, beans, and bay leaf. Season with salt and pepper. Simmer gently for 20 minutes until the sauce is thick and rich. ​Serve steaming hot straight from the skillet. Serve with a torn loaf of rustic bread used as your spoon. Slap anyone who tries to steal a bite. 💥
