Resep Ayam Krispi Balado (untuk 3-4 porsi)
Bahan marinasi ayam:
300 gr paha ayam filet
1 sdt perasan jeruk kunci
½ sdt garam
½ sdt kaldu ayam bubuk
¼ sdt merica
1 sdt gula pasir
½ sdt bawang putih bubuk
1 sdm maizena
Bahan pelapis:
maizena
Bahan sambal balado:
100 gr cabai merah
6 siung bawang putih
6 siung bawang merah
10 buah cabai rawit merah
5 lembar daun jeruk
¾ sdt garam
1 sdt gula pasir
½ sdt penyedap
1 sdm saus sambal (opsional)
10 buah cabai rawit hijau
1 batang daun bawang
1 sdm air
½ sdt perasan jeruk limau
Pelengkap:
nasi putih
timun
Cara membuat:
1. Potong ayam kemudian marinasi dengan perasan jeruk kunci, garam, kaldu ayam bubuk, merica, gula pasir, bawang putih bubuk, dan maizena aduk rata. Diamkan selama 15 menit
2. Balurkan ayam ke dalam maizena, aduk rata kemudian goreng hingga kecokelatan dan matang, tiriskan
3. Sisihkan sebagian minyak, masukkan cabai merah, bawang putih, bawang merah dan cabai rawit merah, masak beberapa saat kemudian pindahkan ke dalam food chopper, haluskan
4. Panaskan wajan, masukkan bumbu balado, daun jeruk, garam, gula pasir, penyedap, saus sambal, cabai rawit hijau dan daun bawang iris, aduk rata kemudian tambahkan air, aduk rata
5. Masukkan ayam yang sudah matang, masak sesaat lalu tambahkan perasan jeruk limau, aduk rata
6. Ayam krispi balado siap disajikan

Crispy Balado Chicken Recipe (yield 3–4 servings)
Chicken marinade ingredients:
300 g boneless chicken thigh
1 tsp lime juice
1/2 tsp salt
1/2 tsp chicken powder
1/4 tsp pepper
1 tsp sugar
1/2 tsp garlic powder
1 tbsp cornstarch
Coating:
Cornstarch
Balado sambal ingredients:
100 g red chili
6 clove garlic
6 pc shallot
10 pc red Thai chili
5 pc kaffir lime leaf
3/4 tsp salt
1 tsp sugar
1/2 tsp MSG
1 tbsp chili sauce (optional)
10 pc green Thai chili
1 stalk green onion
1 tbsp water
1/2 tsp lime juice
To serve:
White rice

Steps:
1. Slice the chicken, then marinate with lime juice, salt, chicken powder, pepper, sugar, garlic powder, and cornstarch. Mix well and let rest for 15 minutes.
2. Coat the chicken with cornstarch. Mix well, then fry until golden brown and cooked through.
3. Set aside some oil. Add red chili, garlic, shallot, and red Thai chili. Cook briefly, then transfer to a chopper and blend.
4. Heat a pan. Add the balado mixture, kaffir lime leaf, salt, sugar, MSG, chili sauce, green Thai chili, and sliced green onion. Stir, then add water and mix well.
5. Add the cooked chicken. Cook briefly, then add lime juice and mix well,
6. Crispy Balado Chicken is ready to serve.
