🍽️ WAGYU, COCO, MANO DE BUDDHA Y MISO ✨🛒 LISTA DE LA COMPRA (Para 4–6 personas)🥩 250–300 g de Wagyu A5 + Sal fina🥥 250 ml Leche de coco entera + 100 ml Nata (35%)🍋 1 Mano de Buddha + 1 Limón🧅 Chalota + Mantequilla🍯 Pasta miso blanco y rojo + Mirin + Sake + Miel + Soja ligera🌿 Hojas de kale + Aceite de girasol🥔 Tupinambo (o ajo) + Vinagre de arroz + Fondo oscuro de carne🧪 Agar agar + 1 carga (para el sifón) 👩‍🍳 ELABORACIÓN PASO A PASO 1. El Wagyu Perfecto 🥩Marca el wagyu a fuego muy fuerte durante 30–45 segundos por lado.¡Ojo! Reserva toda la grasa que suelte (la usaremos luego).Deja reposar la carne 3–4 min y córtala en tiras gruesas.2. Glaseado de Miso y Mano de Buddha 🍯En un cazo a fuego bajo, mezcla: 30g miso blanco, 20g miso rojo, 40ml mirin, 30ml sake, 15g miel, 10ml soja ligera, 20ml zumo y 1 cda de ralladura de Mano de Buddha.Calienta hasta obtener una pasta brillante y ligeramente espesa.Glasear el wagyu con esto al final del marcado o con soplete.3. Espuma Caliente de Coco 🥥💨Suda una chalota pequeña picada con 15g de mantequilla sin que coja color.Añade la leche de coco, la nata y la piel de 1/4 de Mano de Buddha. Infusiona 10 min sin hervir.Cuela fino, rectifica de sal y pimienta blanca, e incorpóralo a un sifón con 1 carga .Mantén al baño maría a 60–65 °C.4. Gel de Mano de Buddha 🍋🔮Infusiona la piel de 1 Mano de Buddha (sin la parte blanca) en 200ml de agua por 15 min. Cuela.Añade 40ml de zumo de limón, 20g de azúcar y 2g de agar agar. Hierve por 1 min.Extiende fino en una bandeja, deja enfriar y tritura hasta lograr un gel brillante. Guarda en biberón.5. Salsa de Grasa de Wagyu 🧪🔥Suda una chalota en la grasa reservada del wagyu. Añade 30ml de soja ligera, 15ml de mirin y 10ml de vinagre de arroz. Reduce.Incorpora 150ml de fondo oscuro y cocina a fuego bajo 8–10 min hasta que ligue.
