BACALAO A LA RIOJANA. INGREDIENTES 4-6 personas: 1 kg de lomos de bacalao 1 kg de tomate rallado o triturado 2 cebollas 6 dientes de ajo 4 pimientos choriceros 2 hojas de laurel Sal Aceite de oliva virgen extra Harina para enharinar ELABORACIÓN: 1. Pon a remojo en un bol con agua los pimientos choriceros sin semillas. 2. En una cazuela pocha la cebolla y los ajos todo picadito y con una pizca de sal, cuando tome un color dorado añade el tomate, el laurel y una pizca de sal. Cocina a fuego lento y tapa dejando una apertura para que evapore. Cuando reduzca el agua, tritura y vierte de nuevo en la cazuela. 3. Fríe el bacalao enharinado y retira a un plato. En la cazuela del tomate agrega los pimientos choriceros en tiras, un poco de agua de hidratar los pimientos choriceros y el bacalao. Cuece tapado durante 5 minutos más y sirve. NOTA: como un buen guiso, el bacalao a la riojana gana de un día para otro. #bacalao a la riojana #annarecetasfaciles
