Resep Sambal Ikan Kembung (untuk 4-5 porsi)
Bahan:
200 gr ikan kembung banjar
1 sdt garam
1 sdm minyak
Bahan sambal:
10 siung bawang merah
2 buah tomat merah
6 buah cabai rawit merah
15 buah cabai rawit hijau
4 gr terasi
1 sdt garam
½ sdt kaldu jamur
2 sdt gula pasir
2 sdt asam jawa
2 buah jeruk limau
Bahan pelengkap:
daun kemangi
timun
Cara membuat:
1. Sayat kedua sisi ikan kembung yang sudah dibersihkan, lalu taburi dengan garam
2. Panaskan sedikit minyak di wajan, masak ikan hingga permukaannya kecokelatan dan matang
3. Untuk membuat sambal, iris bawang merah, potong dadu tomat merah, iris cabai rawit merah dan cabai rawit hijau kemudian bakar terasi sesaat
4. Siapkan mangkuk lalu masukkan terasi bakar, bawang merah iris dan cabai rawit iris. Tambahkan garam, kaldu jamur, gula pasir, asam jawa, dan perasan jeruk limau
5. Hancurkan terasi dan asam jawa sambil diaduk rata lalu tambahkan tomat dan daging ikan kembung suwir. Aduk kembali hingga rata
6. Sambal ikan kembung siap disajikan

Mackerel in Sambal Recipe (yield 4-5 servings)
Ingredients:
200 g Banjar mackerel
1 tsp salt
1 tbsp oil
Sambal ingredients:
10 pc shallot
2 pc red tomato
6 pc red Thai chili
15 pc green Thai chili
4 g shrimp paste
1 tsp salt
½ tsp mushroom bouillon
2 tsp sugar
2 tsp tamarind
2 pc kaffir lime
Additional ingredients:
Lemon basil
Cucumber
Steps:
1. Score both sides of the cleaned mackerel, then sprinkle with salt.
2. Heat a little oil in a pan, then cook the fish until the surface is browned and fully cooked.
3. To make the sambal, slice the shallot, dice the red tomato, slice the red and green Thai chili, then briefly roast the shrimp paste.
4. Prepare a bowl, then add the roasted shrimp paste, sliced shallot, and sliced chili. Add salt, mushroom bouillon, sugar, tamarind, and kaffir lime juice.
5. Mash the shrimp paste and tamarind while stirring until well combined, then add the diced tomato and shredded mackerel. Stir again until evenly mixed.
6. Mackerel in Sambal is ready to serve.
