Once the dough is well proofed, divide it into portions and shape them. Place them on a baking tray, score the tops, and cover with a damp cloth to prevent drying. Let them rest for another 10–15 minutes. Bake in a preheated 200°C (390°F) oven for about 20–25 minutes.
