Stir in walnuts, apricots, and dates. Freeze with Salt & Ice: Bowl Method: Fill large bowl with ice and salt. Nest smaller bowl (with ice cream base) inside. Stir constantly for 15-20 mins until thickened. Bag Method: Pour base into a sealed bag (double-bag). Put in a larger bag with ice and salt. Shake/knead bags for 10-15 mins until firming up. Finish: Remove from ice bath. If using fresh peach, fold it in. Transfer to an airtight freezer container. Freeze 3-4 hours. Stir every 30-60 mins for the first 2-3 hours for best texture.
