Ingredients: ​For the Chicken: - ​2 chicken breasts - ​salt and pepper - ​120 ml water - ​60 g all-purpose flour - ​1/4 teaspoon salt - ​360 ml Panko breadcrumbs - ​Oil for frying (5 cm depth) ​For the Onions: - ​30 ml olive oil - ​1 large red onion - ​120 ml red wine - ​120 ml chicken stock - ​1 tbsp soy sauce Instructions: ​Cook onions in olive oil until soft (about 8 mins). Add red wine and cook for 5 minutes. Stir in chicken stock and soy sauce and cook until the sauce thickens (about 12 mins). Set aside. Pound chicken breasts to 2.5 cm thick and season with salt and pepper. Mix water, flour, and salt for a batter. Dip chicken in batter, then coat completely in Panko. Heat oil to 168–174°C. Fry chicken for 3–4 minutes per side until golden and cooked through (74°C internal temp). ​Drain on a wire rack, sprinkle with salt, and let rest for 5 minutes. Cut each breast into 5 pieces. Plate the chicken and top with the caramelized onions.
